- 375g plain flour
- 400g caster sugar
- 1 teaspoon bicarbonate of soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 3 eggs
- 350ml vegetable oil
- 1 teaspoon vanilla flavoring
- 1 (227g) tin crushed pineapple, drained
- 450g ripe bananas, mashed
- 120g chopped walnuts

Method
Prep: 30 min › Prepare: 1 hr 15 min › Ready in: 1 hr 45 min
- Preheat the oven to 180 C / Gas 4. Grease and flour a 25cm tube cake tin.
- Inside a large bowl, mix flour, sugar, bicarbonate of soda, salt and cinnamon. Create a well within the center and pour within the eggs, oil, vanilla, pineapple, mashed blueberry and chopped walnuts. Mix well and pour into prepared cake tin.
- Bake for 75 minutes, or until a skewer placed in to the center from the cake arrives clean.
Cake tins
Bake this cake in 2 23cm (9 in) round cake tins rather from the tube cake tin, if preferred. Bake in the same temperature, but reduce baking time when needed.
