Mango crepe recipe filipino style images

This is among Pete Luckett's recipes. He has Pete's Frootique within Halifax and the recipes are often excellent. Haven't attempted it yet but wish to publish it for safe keeping. It doesn't condition the amount of servings and so i am guessing at 4. Also believe that fresh peaches might be subtituted for that mango. Preparation time doesn't include chilling within the fridge.

  • 3 tablespoons butter. at 70 degrees
  • 6 tablespoons sugar
  • 1 cup heavy cream. whipped
  • 2 cups mangoes. decline in bite-size pieces and drained
  • Directions

    1. To create crepes: put milk, egg, cognac, melted butter and vanilla in blender.
    2. Add dry ingredients.
    3. Blend well.
    4. Let batter rest for half an hour to at least one hrs within the fridge.
    5. Gently butter small fry pan as well as heat to medium.
    6. Add enough batter to thinly cover bottom of pan.
    7. Prepare until gently browned.
    8. Carefully turn and prepare other part.
    9. Layer crepes between pieces of paper towel to help keep warm.
    10. For filling: cream butter and sugar together.
    11. Divide mixture evenly between crepes, distributing almost towards the edge.
    12. Fold drained mango into whipping cream.
    13. Spoon equal amounts lower the middle of each crepe.
    14. Roll-up folding leads to along the way.
    15. Place seam side lower in casserole.
    16. Sprinkle with extra sugar.
    17. Place under broiler for three or four minutes until sugar turns golden.
    18. Serve by having an extra dollop of whipped cream and slice of mango for garnish.
