Flourless Blueberry Bread

Ingredients


  • 2 1/2 cups folded oatmeal (260g)
  • 1 3/4 cups mashed blueberry (420g)
  • 1 teaspoon sodium bicarbonate
  • 1/2 teaspoon cinnamon
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 1/2 teaspoon pure vanilla flavoring
  • 1/3 cup milk of preference OR oil
  • 1/2 cup pure walnut syrup, agave, or honey
  • 1 1/2 tablespoons of vinegar
  • 1/2 cup small choc chips, optional

Total Time: 35m Yield: Constitutes a 9x5 loaf

Instructions

Preheat oven to 350 F, and grease a 95 loaf pan perfectly, ensuring to increase the edges. Place the oatmeal inside a blender and blend until an excellent powder forms. Add other ingredients (except optional chips) and blend until smooth. Stir in optional chips if using. Pour the batter in to the prepared pan, then bake around the middle rack for 35 minutes. Turn the oven off, but DON’T open the oven. Allow the bread sit within the closed oven for an additional ten minutes. Then remove in the oven and let awesome completely prior to going round the sides having a knife, then inverting onto a plate.
