  • 2 cups (250g) plain flour
  • 1 teaspoon salt
  • 1 1/2 teaspoons bicarbonate of soda
  • 1/3 cup (50g) unsweetened cacao powder
  • 1 cup (220g) white-colored sugar
  • 2 eggs
  • 2 cups grated zucchini
  • 1/2 cup (125ml) vegetable oil
  • 1 teaspoon vanilla essence
  • 1/2 cup chopped walnuts

  1. Preheat oven to 180 levels C. Grease a 25cm x 40cm jellyroll roll cake tin.
  2. Inside a large mixing bowl sift together flour, salt, bicarb soda, cacao and sugar.
  3. Combine eggs, zucchini, oil and vanilla then blend into dry ingredients. Stir in walnuts.
  4. Bake for 25 minutes in preheated oven. Awesome within the tin then reduce squares.
