Hi Joan, the new mixture could be enough to close the jars, however for saftey reasons you have to can them correctly by sterilizing your jars and taking advantage of the new water bath method. It is only safer this way. My MIL just allows them to seal around the counter once the mixture is hot but it's not suggested.

No I haven't I only used one 48 - 50 jar of apple sauce. It might be to thin if two jars were utilised. That's just my estimation. If you wish to use two go ahead and achieve this.
