Pacha manga / Raw eco-friendly mango 500 gms

Kashmiri Red Chilly Powder three or four tablespoons of

Turmeric powder ¼ teaspoon

Ginger root 2 tablespoons of, chopped

Garlic clove- 1 whole pod or 4 tablespoons of chopped

Mustard seeds / Kaduku 1 teaspoon

Fenugreek seeds / Ulluva ½ teaspoon

Asafetida / Kaayam ½ teaspoon

Sugar ½ teaspoon

Vinegar 250 ml / 1 cup (adjust based on sourness from the mangoes)

Curry leaves- couple of

Gingelly oil / Sesame oil / Nalenna ¼ cup

  • Neat and take away the skin of mangoes and work into small pieces. Add enough salt and for twenty-four hrs prior to making pickle.
  • Grind together ginger root, garlic clove, red chilly powder, and turmeric powder using vinegar.
  • Heat oil inside a pan, add mustard seeds. Once they appear add fenugreek seeds.
  • Add some ground masala curry leaves and saut well.
  • Add vinegar, sugar, Asafetida / kaayam and salt (as needed) and boil.
  • Next add some minced mangoes and boil for several-4 minutes. Awesome and store in clean dry bottles.

  • You don’t have to store this pickle inside a refrigerator as no water is added while making.
  • Never place a wet spoon within the pickle bottle. If stored now this pickle can last several weeks at 70 degrees.
