Post raisin bran apple-walnut muffins recipe

Ingredients

  • 1 1/2 cups flour
  • 1/3 cup firmly packed brown sugar
  • 1 tablespoons of baking powder
  • 1 teaspoon ground cinnamon
  • 1 egg
  • 1 cup fat-free milk
  • 1/3 cup unsweetened applesauce
  • 1 tablespoons of vegetable oil
  • 1 1/2 cups Publish Raisin Bran Cereal
  • 1 medium apple
  • 3/4 cup chopped walnuts

Directions

Preheat oven to 425°F. Mix flour, sugar, baking powder and cinnamon in large bowl put aside. Beat egg, milk, applesauce and oil in normal size bowl with wire whisk until well blended. Stir in cereal let stand 5 min. Increase flour mixture stir just until moistened. (Batter is going to be lumpy.) Stir in apples and walnuts. Spoon batter evenly into 12 greased or paper-lined medium muffin cups. Bake for 25 minutes or until toothpick placed in centers arrives clean. Awesome for five min.

Variation: Prepare batter as directed, stirring in just 1/2 cup from the walnuts. Spoon into muffin cups as directed sprinkle with remaining 1/4 cup walnuts. Bake as directed.
