Leg of lamb recipe orange juice

Ingredients

  • 4 cloves garlic clove, minced
  • 6 sprigs fresh rosemary oil, 3 selected and chopped
  • two tablespoons fresh thyme leaves, plus 3 whole sprigs for roasting
  • 3/4 cup freshly squeezed orange juice
  • 3/4 cup dry white-colored wine, for example chardonnay
  • 5 tablespoons extra-virgin essential olive oil, plus much more for drizzling
  • 1 (5- to six-pound) boneless leg of lamb, tied
  • Coarse salt and freshly ground pepper
  • 1 large onion, reduce three or four pieces
  • 3 carrots, peeled and reduce three or four pieces each
  • 1 large bulb fennel, trimmed and reduce three or four pieces
  • 2 leeks, trimmed and reduce three or four pieces each

Directions

Place garlic clove, chopped rosemary oil, thyme leaves, orange juice, wine, and three tablespoons essential olive oil within the jar of the blender pulse five to six occasions to mix. Generously season lamb with pepper and salt and transfer to some large resealable plastic bag add liquid from blender and seal bag, squeezing out all of the air.
