Lemon curd tart recipe masterchef

165g caster sugar

150g butter, softened

160ml fresh lemon juice

  • Preheat oven to 200C.
  • For that pastry, mix butter and sugar inside a bowl with fingers until light. Add egg then stir in remaining ingredients to mix and produce dough together. Flatten dough, wrap in plastic and transfer towards the fridge to relax for half an hour.
  • Roll rested dough to 2mm thickness and cut 16 x 7cm dvds. Pace in tartlet or muffin tin and put in freezer for five minutes to relax. Devote the oven to bake until golden brown, about 10-fifteen minutes. Put aside to awesome.
  • For that lemon curd, place eggs and sugar inside a bowl and whisk well. Place bowl over saucepan of simmering water and whisk in remaining ingredients. Prepare, whisking until thickened. Remove bowl from heat.
  • Allow curd to awesome slightly then pour into tart cases and chill for half an hour to create.
