Ingredients

  • 1/3 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 (6-ounce) prepared reduced-fat graham cracker cake crust

Instructions

  • Preheat oven to 350°F. In medium bowl, beat egg yolks stir in sweetened condensed milk, fresh lemon juice and food coloring, if preferred. Pour into crust.
  • In large bowl, beat egg-whites with cream of tartar on high-speed until soft peaks form. Progressively beat in sugar on medium speed, 1 tablespoon at any given time beat 4 minutes longer or until sugar is dissolved and stiff glossy peaks form. Spread meringue over cake, carefully sealing to fringe of crust to avoid meringue from shrinking.
  • Bake 12 to fifteen minutes or until golden brown. Awesome. Chill before serving. Store leftovers covered in refrigerator.
