The recipe "Esh al bulbul " among the recipes it's reminds us of "Ramadan" the ninth month of Islamic calendar or as it is called Fasting month.

For "Esh al bulbul " you'll need:

1 package (about 500 g) konafa =kataifi shredded pastry .

Almonds, Pistachios, hazel nut.


For shira (syrup):
1 1/2 cup sugar
1/2 cup water
1 teaspoon orange blossom water or rose water
1 tablespoon fresh lemon juice


To create shira (syrup):
Combine all component inside a medium pan, stir over heat, until sugar is dissolved simmer, uncovered without stirring about fifteen minutes or until mixture is thickened.

1)Take a tiny bit of shredded pastry ,roll it around your finger then Put on baking sheet.

2)Bake in 350F oven, for twenty to thirty minutes or until it gently browned ,then fill each with two or three bits of your preferred nut,(dip the nut within the syrup then put it in the heart of konafa).


3)Lower the oven heat to 300 F. and bake for ten to fifteen or until they gold and crunchy.
