
I lately rediscovered Millet Croquettes, I’d forgotten just how much I loved them and just how tasty they're. I believe we once had them every week as children becoming an adult inside a macrobiotic household.
Millet, which you'll get in nutrition stores, is super healthy, gluten-free and simple digestible. It’s a fantastic option to grain or pasta and it is simple to prepare. Additionally, it tastes great, no question parakeets enjoy it a lot!
Millet is effective like a base for patties because it holds its shape well. I chose to make this recipe with grated carrot, shallots and Parmesan but you can experiment. This recipe is another good way of utilizing leftover cooked millet .
My daughter really enjoyed eating these croquettes. I’m wishing she is constantly love them just like Used to do after i would be a kid because they are so great on her.
For all of us adults, I offered all of them with a yogurt fresh coriander dip along with a salad.
The simplest way would be to bring 1 cup of millet towards the boil with 2 glasses of water. Lessen the heat to low, cover and prepare for fifteen minutes. Put aside and then leave to relax uncovered for around twenty minutes.
This makes roughly 3 glasses of cooked millet.

Note: 1 cup = approximately 250ml
Makes approximately 9 croquettes
2 glasses of cooked millet (See instructions above)
2 shallots, finely chopped
2 small carrots, grated
1 large garlic clove clove. finely chopped
1 cup grated parmesan
1 large number of chopped parsley
Salt pepper, season to taste
Fry the chopped shallots and garlic clove inside a little essential olive oil until softened. Add some grated carrots and take heat.
Inside a bowl whisk the egg and add some carrot mixture and all sorts of remaining ingredients. Mix well and taking advantage of both hands shape the millet mixture into 9 croquettes or patties roughly 5cm diameter.
Heat the vegetable oil inside a fry pan on the medium heat. Drop the croquettes once hot and prepare for several-a few minutes on every side until they're golden and crispy.
