I cheated - Used To Do use nonfat sour cream also it switched out all right. I believe the warning not for doing things happens because many people would heat it excessive also it would curdle or something like that. I heated it on really low also it was good. I believed the parm and butter had enough fat which i did not require the full fat sour cream too.
