I favor a spicier salsa, but nobody else in the household does. The parsley however, is overpowering. 1/4 cup is simply too much (and that i like parsley!). The next time I'll just use one sprig, if. I believe I'll try fresh lemon juice rather of lime the next time, lemon appears to 'lift' flavours better. EDITED To Include: I needed to throw this out. The parsley flavour got so intense it had been completely overpowering. The tomato and onion flavours also were strange - rather of 'fresh', this just sampled raw in my experience. Possibly I'll do this again but I'll simmer everything for any bit first, to get rid of the raw flavour.
