Cinemas use butter-flavored oil, with a lower water content than butter therefore it makes popcorn less saturated. Real clarified butter has got the same effect. To really make it, melt 2 sticks butter inside a glass calculating cup within the microwave. Let take a couple of minutes the butter will separate into 3 layers. Skim from the top layer of froth. then gradually pour the clarified butter right into a heatproof container discard the underside layer of milk solids. Use 3 tablespoons hot clarified butter for 10 cups popcorn refrigerate the remainder (it is good for sauteeing).
