For instance, my dad was at a mood to prepare and merely known as me requesting a recipe. My Mother was most likely rejoicing! He stated he'd frozen mixed vegetables. What is he going to make? The best of this is, you don't want to get fancy about this either. Just about everyone has frozen veggies within our fridge. Here's my easy-peasy recipe for whipping them up right into a tasty, easy dish which goes very well with with plain grain, hot Chapatis or Parathas. Ingredients
  • 1 large onion quartered
  • 3 medium-sized tomato plants quartered
  • 2 eco-friendly chillies (reduce if you would like less heat)
  • 5 cloves garlic clove
  • 1" bit of ginger root
  • 3 tbsps vegetable/ canola/ sunflower oil
  • 2 tsps coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon red chilli powder (optional)
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 500 gms chunky, mixed frozen vegetables - for instance cauliflower, broccoli, beans, corn, peas.
  • Salt to taste
  • 4 tbsps thick unsweetened yogurt (should not be sour), whisked till smooth
  • Chopped fresh coriander to garnish

Preparation
  • Thaw the vegetables completely. I love to do that by setting them on a plate for a while. You can thaw them within the microwave however i discover that this will make them mushy.
  • As the vegetables are thawing, place the quartered onion, tomato plants, eco-friendly chillies, ginger root and garlic clove right into a mixer and grind right into a smooth paste.   • Garnish with chopped fresh coriander and serve with Jeera Grain. plain grain, hot Chapatis or Parathas !
