Why is this dish would be the soft fresh broad grain noodles (ho fun) that take in the taste from the sauces. This fast and simple form of Beef Chow Fun uses black bean sauce and baby corn.

Ingredients
  • 1 lb beef flank steak
  • 5 teaspoons dark soy sauce
  • 1 tablespoon Chinese grain wine or dry sherry
  • 1/2 teaspoon sugar
  • a couple of drops sesame oil
  • 1 teaspoon corn starch
  • 1/2 pound fresh grain noodles
  • 1 8-ounce can baby corn
  • 2 garlic clove cloves
  • 1 tablespoon Chinese black bean sauce
  • 1 1/2 to two tablespoons oyster sauce
  • 5 tablespoons oil for stir frying, or when needed

Preparation

Cut the flank steak over the grain into thin strips about 1/4-inch thick. Add some dark soy sauce. grain wine, sugar, sesame oil, and corn starch. Marinate the steak for fifteen minutes.

As the steak is marinating, prepare the vegetables: rinse the infant corn in warm flowing water and drain. Smash, peel, and chop the garlic clove cloves.

If using refrigerated grain noodles, rinse them in tepid to warm water to release. Cut the noodles into 1/two to threeOr4 inch strips.

Heat the wok and add two tablespoons oil. Once the oil is hot, add some beef. Lay flat and let brown for any minute. Stir within the black bean sauce and stir-fry the beef until it's browned and nearly cooked through. Remove in the wok.

Cleanse the wok and add 2 more tablespoons oil. Once the oil is hot, add some garlic clove and stir-fry until aromatic. Add some grain noodles and stir fry until browned.

Push the grain noodles to the side from the wok and add another tablespoon oil. Once the oil is hot, add some baby corn. Stir-fry briefly, then mix using the noodles. Stir within the oyster sauce .

Add some beef into the wok. Mix everything together and serve hot.

Comments: This recipe is extremely simple and easy , scrumptious. A Chinese friend states it's much better than food she's had at Chinese resturants--high praise! My children aren't interested in baby corn, and so i usually substitute with veggies they like (carrots, snow peas, etc.), but regardless of combination, as it happens GREAT!
