We're not draining the bacon fat, however, you could should you wanted. For fat in the hamburger, the only real hamburger I'm able to find nowadays is either lean 16% or extra lean 9%. We avoid extra lean since it’s too dry and flavorless. With 16% there’s simply not enough fat to empty.
