Recipe for Fish Mind Noodle Soup
Ingredients for Fish Mind Noodle Soup:
- 750g "Batang" fish mind, reduce 1 ½ x 1 " slices
- 250g thin grain noodles or laksa noodles (drenched, cooked in boiling water, drained)
- 2 slices of ginger root, shredded
- 80g spring onion (reduce sections)
- 1 tomato reduce quarters
- 1 litre water
- 2 red chillies (seeded chopped)
- Dash of pepper
- Dash of sesame oil
- Enough oil for deep frying
- 1 tablespoons of cooking wine or dry sherry
- 1 tablespoons of oyster sauce
- 1/4 teaspoon pepper
- 1 teaspoon sesame oil
- Salt to taste
Method:
- Utilizing a sharp knife, cut and divide fish mind into bite-sized portions
- Heat enough oil inside a deep-fryer adding the slices in
- Deep-fry till golden brown, turning once (2 mins)
- Remove and drain excess oil
- Heat about 3 tablespoons of oil inside a wok and brown the ginger root slices
- Add some fish mind pieces and 1/2 chives, stir-fry everything (1 min)
- Remove and hang aside
- Pour water right into a pot and produce to some full boil, add tomato
- Add 1/2 from the spring onions and all sorts of ingredients for that seasoning (salt, oyster sauce, pepper, sesame oil and cooking wine)
- Permit the soup to simmer before removing from heat (1 min)
- Divide cooked noodles into individual bowls, sprinkle having a couple of drops of sesame oil and pepper on the top
- Arrange bits of fish mind and chillies on noodles
- Pour hot soup over bowls and serve immediately
