two tablespoons extra-virgin essential olive oil (EVOO)
2 pounds (about four to six, based on size) boneless, skinless chicken breasts, reduce small bits

1 large onion, chopped
3 ribs celery, finely chopped
5 large cloves garlic clove, finely chopped or grated
1 tablespoon smoked paprika
1 bay leaf
Salt and freshly ground pepper
2 cups chicken stock

1 15-ounce can crushed tomato plants
1 pound wheat grains elbow macaroni
1/2 cup pepper jack cheese
1/2 cup crumbled blue cheese
