Minced beef and chorizo chili recipe

This scrumptious, Mexican-inspired chili is loaded with fiber, niacin, vitamin B6, b12, iron, selenium and zinc and an excellent source of protein.

Recipe Ingredients:

Chili:
1 pound 95% lean hamburger
7 to eight ounces beef chorizo
1 1/2 cups chopped white-colored onions
two to four medium serrano peppers, chopped
two tablespoons ground ancho chili powder or regular chili powder
two tablespoons masa harina or cornmeal
1 tablespoon dried Mexican or regular oregano leaves, crushed
1 teaspoon salt
2 (15-ounce) cans garbanzo beans or pinto beans, drained and rinsed
1 (28-ounce) can diced tomato plants, undrained

Creamy Avocado Dressing: (optional)
1 medium ripe avocado
3/4 cup water
1/4 cup fresh lime juice
1 peeled clove garlic clove
1/2 teaspoon salt

Hot cooked grain for accompaniment (optional)

Recommended Toppings: Sliced radishes, crumbled queso fresco, dairy sour cream, sliced eco-friendly onions (optional)

Cooking Directions:

  1. For Chili: Heat large nonstick skillet over medium heat until hot. Add hamburger, chorizo, onions and peppers prepare eight to ten minutes, entering 3/4-inch crumbles and stirring from time to time. Remove from skillet with slotted spoon pour off drippings. Return beef to skillet.**
  2. Add chili powder, masa harina, oregano and salt prepare and stir one minute. Stir in beans and tomato plants provide a boil. Reduce heat cover and simmer fifteen minutes. Remove from heat let stand a few minutes before serving.
  3. Serve over grain with toppings, if preferred.
  4. For Creamy Avocado Dressing: Cut avocado into chunks. Place avocado, water, lime juice, garlic clove and salt in blender container. Cover process until smooth. (Might be prepared as much as one day ahead. Cover and refrigerate.)

Makes four to six servings.

*To manage the amount of spicy heat, remove and discard some or all the seeds and membranes in the peppers.

**Cooking occasions are suitable for fresh or completely thawed hamburger. Hamburger ought to be cooked for an internal temperature of 160F (70C). Color isn't an indicator of hamburger doneness.
