1 egg (or perhaps your favorite substitution -- I hear Ener-G is most effective) 1/8 cup pumpkin 1/8 cup canola oil 1/2 teaspoon vanilla 1/4 teaspoon fresh lemon juice 1 teaspoon molasses 1 teaspoon white-colored vinegar 1/2 cup sugar 1/2 cup canned beets -- processed so that they are finely grated 1 cup apples, chopped Fist-filled with dried cranberries1/4 cup wheat pastry flour 1/3 cup oatmeal 1/4 cup coconut flakes 1/4 teaspoon sodium bicarbonate 1/8 teaspoon baking powder pinch of salt 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg dash of ginger root -- to taste

- Preheat oven to 350 levels F.
- Grease muffin tin with butter (or spray with oil). You may even use paper liners.
- Inside a large bowl, combine egg (or substitute), pumpkin, oil, vanilla, molasses, fresh lemon juice, vinegar, sugar, beets, apples, cranberries and stir well to mix.
- In another bowl, whisk together dry ingredients.
- Add some dry towards the wet and stir having a rubber spatula to simply combine.
- Fill muffin cups 1/two to threeOr4 full and bake for 12-fifteen minutes. Mine required 16.
