I ate four of those soon after they left the oven - these were great!
I made use of 2 whole eggs instead of 3 egg yolks, plus they were soft and soft and flavourful. Certainly a "make again" recipe.

These cookies were very fast and simple to create. The batter created a pleasant thick crisp coffee flavored cookies. Used to do add more sugar, personal preference only, maybe my instant coffee was too strong. The next time I make these I'll add choc chips or almonds. Appreciate discussing your recipe.
