I ate four of those soon after they left the oven - these were great!
I made use of 2 whole eggs instead of 3 egg yolks, plus they were soft and soft and flavourful. Certainly a "make again" recipe.
These cookies were very fast and simple to create. The batter created a pleasant thick crisp coffee flavored cookies. Used to do add more sugar, personal preference only, maybe my instant coffee was too strong. The next time I make these I'll add choc chips or almonds. Appreciate discussing your recipe. It's my job to be put off by any recipe which includes coffee, or which i don't feel at ease omitting that component! That one I designed for my partner to consider to operate & tell co-workers! I did not obtain the 'oohs & ahhs' feedback from their store, but neither have there been any left, so. I suppose these were sufficiently good to eat! AND, I had been requested to ensure they are again sometime!
