Ingredients:
- 15 Small Brinjals / Eggplants
- 3 tablespoons of Oil
- 2 teaspoon Coriander Seeds
- 1.5 tablespoons of Chana Dal
- 2 teaspoon Urad Da l
- 1 teaspoon Oil
- 6 Dried Red Chillies
- 2 tablespoons of Dry Coconut
- Salt when needed
Method:
- Heat a teaspoon of oil inside a pan and add some coriander seeds, chana dal and urad dal and fry them on the medium flame till they're golden brown color.
- Take them off in the pan and hang aside to awesome lower.
- Within the same pan, add and fry the red chillies for minutes.
- Grind the roasted ingredients, dry coconut, salt and roasted red chillies right into a fine powder and hang aside.
- Wash the eggplants making a plus (+) slit at the base from the eggplant. Keep one finish intact.
- Now fill the stuffing powder in to the brinjals.
- Heat oil inside a wok. Put the stuffed eggplants carefully in to the wok and canopy it having a lid.
- Allow it to prepare on the low - medium flame. Keep checking among and switch the brinjals just a little until they're evenly cooked.
- When they're soft, switch off the flame.
- Serve hot with grain and ghee.
