Ingredients
1/2 pound eco-friendly tagliolini
3 tablespoons essential olive oil
2 cloves garlic clove minced
6 small zucchini very thinly sliced
1 cup fish stock
1/4 cup brandy
1/4 cup tomato sauce
1 pound small (36 to 45 count) shrimp peeled
salt and red pepper to taste
Directions:
Prepare pasta based on package directions.
Inside a large, heavy skillet, heat the oil over medium-high temperature and saut garlic clove for 2–3 minutes. Add zucchini strips and saut for 4–5 minutes, stirring constantly. Stir within the stock, brandy, and tomato sauce and simmer 2–3 minutes. Add some shrimp towards the sauce and prepare until shrimp are opaque, about 2–3 minutes. When pasta is al dente, increase the skillet, lightly toss using the sauce and simmer 1–2 minutes. Season to taste with salt and red pepper. Serve family style on the large decorative platter.
