Ingredients
- 1 tablespoon essential olive oil
- 1 large pork hock
- 1 cup onion, chopped
- 1/2 cup celery, chopped
- 1/2 cup eco-friendly pepper, chopped
- 1 tablespoon chopped garlic clove
- 1 pound black-eyed peas, drenched overnight and rinsed
- 1 quart chicken stock
- Bay leaf
- 1 teaspoon dry thyme leaves
- Salt, pepper, and cayenne
- 3 tablespoons finely chopped eco-friendly onion
- 3 cups steamed white-colored grain
Directions
Heat oil inside a large soup pot, add some pork hock and sear on every side for 4 minutes. Add some onion, celery, eco-friendly pepper. and garlic clove, prepare for 4 minutes. Add some black-eyed peas, stock, bay leaves. thyme, and seasonings. Provide a boil, lessen the heat and simmer for 40 minutes, or before the peas are creamy and tender, stir from time to time. When the liquid evaporates, increase the water or stock. Adjust seasonings, and garnish with eco-friendly onions. Serve over grain.
