Resepi Sambal Sotong Kembang Berkacang, Che Nom memang selalu masak sambal ni untuk dipadankan bersama kuah lodeh kerana rasa lemak dari kacang tu menambah lagi kesedapan hidangan Lontong.

Sotong kembang selalunya ada dijual di pasar basah atau supermarket. Sotong ni berwarna coklat pudar dan tak perlu direndam lagi, cuma perlu direbus seketika sebelum dimasak sambal. Sambal ni sesuai juga dimakan bersama nasi lemak dan rasanya memang sangat sedap.

Cara memasak sambal pula lebih kurang macam “all-in-one method ” kerana cili dikisar bersama bawang dan kemudian ditumis di dalam minyak yang secukupnya.

Bahan-Bahan:

  • 2 ekor sotong kembang
  • segenggam kacang tanah
  • 2 sudu besar sos tiram
  • 1 biji bawang besar, hiris nipis
  • 2 senduk minyak masak
  • 1/2 cawan air asam jawa (boleh digantikan dengan 2 asam keping)
  • garam dan gula secukup rasa
Bahan untuk kisar halus:
  • 20 biji cili kering, buang biji dan direbus terlebih dahulu
  • 1 biji bawang besar
  • 5 ulas bawang putih
  • 7-8 biji bawang merah
  • 1 inci halia

Cara Penyediaan:

  1. Goreng kacang tanpa minyak (sangai) dan buang kulitnya. Kemudian kisar kasar dan ketepikan.
  2. Bersihkan sotong kembang dan bilas sedikit bersama limau nipis atau air asam jawa untuk mengelak dari rasa hanyir. Kemudian hiris sotong kembang mengikut kesukaan masing-masing.
  3. Panaskan air sehingga mendidih dan rebus sotong kembang selama lebih kurang seminit. Kemudian toskan airnya.
  4. Panaskan minyak dan tumis bawang besar yang dihiris nipis sehingga kekuningan.
  5. Masukkan pula bahan kisar halus dan masak di atas api perlahan sehingga pecah minyak.
  6. Masukkan sotong kembang, kacang kisar dan sos tiram. Masak sehingga kuah pekat dan perasakan bersama garam dan gula secukup rasa.

Goreng kacang tanpa minyak (sangai) agak mengambil masa yang panjang. Jika anda tidak mempunyai masa, terus goreng kacang tanah di dalam minyak panas, buang kulit dan kisar kasar. Hati-hati kerana kacang cepat hangus jika digoreng di dalam minyak panas.
