String Hopper mold
String Hopper wattie (woven small circle trays - obtainable in Sri Lankan supermarkets).
Roasted red or white-colored Grain flour (Ready to use string hopper flour (roasted grain flour)
METHOD
Inside a dry bowl take two cups roasted grain flour (flour ought to be fine & free flowing without clumps).
Add 1 teaspoon table salt, mix well.
Let 4 glasses of water boil intensely. Progressively add some boiling water to grain flour before you can build a dough that doesn't keep to the bowl (It is crucial that you receive the best consistency from the dough, to obtain the right texture from the string hoppers - light, fluffy & dry to touch. Also without proper consistency, it will likely be difficult to squeeze the fine strings with the mold).
Stack the watties on the top of one another and steam until done.
With single serving of grain flour you may make 6-7 small string hoppers (4 inches across). You should result in the dough in small quantities (2-3 glasses of grain flour) at any given time. String hoppers are scrumptious with Kirri Hodi, Lunu Miris or Seeni Sambol, Malu Ambulthial or Meat curry.
