Method

Step One

Peel taters. Having a sharp knife or peeler scoop the flesh from the middle of one for reds to create a hollow. Cut the trimmings finely.

Heat sufficient oil inside a kadai and deep-fry the hollowed taters till light brown. Drain on absorbent paper. Create a marinade with hung yogurt, ginger root paste, garlic clove paste, fresh lemon juice, salt, Kashmiri red chilli powder, garam masala powder, roasted chana powder and blend well.
