Kaju Katli it's a beautiful dessert of Indian Origin. Unlike what individuals consider this sweet, it's quite simple to create. You may make either kaju Katli or Kaju rolls. It's also referred to as Kaju burfi.
- 1 cup of cashews(kaju)
- 3/4 cup (or slightly less if you like) of powdered sugar
- 1/8 cup water
- 1 teaspoon ghee(Clarified butter)
- 1/4 teaspoon Cardamom powder(Optional)
- A pinch of Saffron(Optional)
- Chandi warak(Silver leaves)(optional)
Grind kaju to create powder
Mix kaju powder and powdered sugar
Heat heavy bottom pan
Add ghee and allow it to melt
When ghee is melted, add mixture of cashew and sugar
Prepare cashew and sugar for around 11-2-2 min only on medium heat. Don't let it brown
Now, after cooking short while, make well in center and add under 1/8 cup water and immediatly add saffron into water to dissolve(if adding saffron)
Prepare another minute approximately or till water is evaporated.
Make certain mixture does not get hard.
Before it will get hard, spread mixture with an ungreased tray.
May decorate with chandi warak (silver foil)
Cut diagonal or square shape
Same technique is put on make pistachio and Badam katli (Almond)
