After my daughter were built with a bad restaurant rellenos experience (don't ask), I searched for a casserole recipe that will taste authentic with no frying. Kittencal never lets me lower. I added a pinch of cayenne towards the eggs and milk, and used the Texas Red Enchilada Sauce (#42094) for that salsa. Voila! (or Velado!) Daughter's belief in Mother and good Mexican food affirmed and restored. ¡estupendo

This really is my new favorite go-to recipe for brunch or lunch. It is simple, scrumptious and pretty for everyone. I offered salsa quietly.
I chose to make this in my Mah Jongg lunch group and everybody wanted the recipe! I offered it using the new Costco 7-Super Foods Salad Mix. (I managed to get the night time before after which just warmed up for supper. Easy!)
