Lauw slaatje met scampi recipe

Pel en kook de scampi’s.
Neem 6 grote glazen, giet in elk glas een bodempje room en bestrooi dit met zout en peper.
Schil de mango en de appel, was de courgette en pel en ontpit de tomaten.
Snij de mango, appel, courgette en tomaten in zeer kleine dobbelsteentjes (brunoise).
Doe de dobbelsteentjes in een mengkom.
Bestrooi ze met zout en peper, voeg een klein scheutje olijf- en notenolie, frambozenazijn en de citroensap foot.

Meng alles goed.
Schep in elk glas 5 eetlepels dobbelsteentjes.
Snij intussen de scampi’s in schijfjes en bedruppel ze met een klein beetje notenolie.
Leg de schijfjes op de dobbelsteentjes en garneer het slaatje met een blaadje selderij.

Drink er een koele Chablis of Sancerre bij.

In plaats van scampi’s kan ook kreeft worden gebruikt.
Neem dan een half kreeftje per persoon.
Wrijf de kreeftscharen in met olijfolie en zet ze op de rand van het glas.
