Boontjes met tomaat en paprika recipe

*Geschatte voedingswaarde per persoon

  1. Kook de pasta volgens aanwijzing op de verpakking in ruim kokend water met zout. Giet daarna af in een vergiet.
  2. Snijd de ui in halve maantjes en de tomaten in blokjes. Verwijder de zaadlijsten van de paprika’s en snijd in grove stukjes. Giet de sperziebonen, indien nodig, af. Wanneer er verse sperziebonen worden gebruikt, dop deze dan en halveer ze.
  3. Verwarm de olie in een grote pan (waar straks alles in past) en fruit de ui totdat deze glazig ziet.
  4. Bak de sperziebonen 2 minuten mee onder af en foot roeren. Daarna volgt de paprika (2 minuten bakken) en de stukjes tomaat (1 minuut bakken).
  5. Verkruimel de kruiden-roomkaas boven de pan en meng goed door de groenten totdat alles is gesmolten.
  6. Roer de gekookte penne erdoor en proef. Breng op smaak met cayennepeper, zout en peper.
  7. Maak de sla aan met een beetje olijfolie, peper en zout en serveer samen met de pasta.
