Pumpkin soup, or sopa de abbora, is among the most traditional Portuguese soup recipes. It features a sweet and different pumpkin flavor and smooth texture. The scent emanating in the soup is unbelievable and it is quite enjoyable to create this fact alone. This can be a perfect soup for enjoying throughout the cold holidays because it is a hearty and scrumptious soup that's easy and simple to create.

Ingredients:
2 lbs. pumpkin
1 tablespoon essential olive oil
1 tomato, diced
1 onion, minced
4 garlic clove cloves, minced
1 teaspoon chopped parsley
1 teaspoon cinnamon powder
pepper and salt to taste
Directions:
1) Peel the pumpkin and carrots and cut them into cubes. Add these to a blender and puree them until they're an even as well as consistency.
2) Now add these to a saucepan with water combined with the minced onion and garlic clove cloves.
3) Add some tomato, essential olive oil, and cinnamon powder and stir rid of it. Take it to some boil.
4) When the vegetables are tender and soft then then lessen the heat to some simmer. Then add more water if it's too thick, and prepare much more time on low heat.
5) Once to control your emotions, add pepper and salt to taste and stir rid of it. Cover using the chopped parsley and serve.
