  • 4oz/100g dried vermicelli noodles
  • 2 cups white-colored or eco-friendly cabbage, shredded
  • 1 cup shredded carrot
  • 1 cup bean sprouts
  • 2 shallots, finely sliced
  • cup coriander leaves
  • Fried Asian Shallots, to garnish (optional)

Dressing (see notes for substitutions)

  • 2 tablespoons of light soy sauce
  • 2 tablespoons of grain wine vinegar
  • 1 teaspoon sugar
  • 1 tablespoons of grapeseed oil (or other neutral oil)
  • 1 garlic clove clove, minced
  • 1 wild birds eye chilli, finely minced
  1. Combine dressing ingredients inside a jar and shake well to mix. Put aside for that flavours to infuse.
  2. Soak vermicelli in boiling water for any couple of minutes (or per packet instructions), then drain and rinse under cold water (this stops them cooking further as well as from sticking together).

Hi Gabrielle! I'd use vegetable or canola oil instead of essential olive oil because essential olive oil has a tendency to convey more flavour. But failing that, essential olive oil works all right Wild birds eye chilli is really a small red chili you are able to substitute with any fresh red chilli you would like. And make the quantity to taste!

I don’t use light soy sauce and so i is going to do while you suggest and employ fish sauce with my regular soy sauce..
