For the best recent results for roasting asparagus, use thick asparagus spears, not skinny ones. The skinny ones will dry up too rapidly and can finish up tough and stringy.

Ingredients

  • 1 lb asparagus spears (thick spears are perfect for roasting)
  • 1-2 Tablespoons of essential olive oil
  • 2 cloves garlic clove, minced
  • Kosher Salt
  • Freshly grated pepper
  • Fresh lemon juice (or balsamic vinegar)

Method

1 Preheat oven and prep asparagus: Preheat your oven to 400°F (205°C). Rinse the asparagus spears. When the ends are tough, break them off and only discard or save for stock. You may also make use of a vegetable peeler to peel away the challenging outer skin from the fatter ends from the asparagus if you would like.

2 Drizzle asparagus with essential olive oil, salt, pepper, garlic clove: Line a roasting pan with foil. Arrange the asparagus spears in one layer around the lined roasting pan.
