Weight watchers oven roasted ratatouille recipe


Ratatouille
Eggplant, zucchini, tomato plants, bell pepper, garlic clove and onion sauteed with fresh herbs. Perfect way to utilise your summer time garden vegetables.

  • 1 large onion, chopped
  • 2 red peppers, chopped
  • 3-4 small zucchini squash, reduce 1/4 inch slices
  • 1 large eggplant, peeled and cubed
  • 4 large tomato plants, chopped
  • 3 cloves garlic clove, chopped
  • 2 tablespoons of chopped fresh parsley
  • 1 bay leaf
  • 1 sprig rosemary oil
  • 2 sprigs of thyme
  • salt and fresh pepper to taste
  • 1/3 cup seasoned wheat grains bread crumbs
  • essential olive oil spray (I made use of my Misto )

Inside a 4-quart nederlander oven or saucepan, spray a pan with cooking spray. Prepare the onion and also the garlic clove on low heat until soft, 5-6 minutes, don't let garlic clove burn. Add eggplant, peppers and tomato plants, provide simmer covered for fifteen minutes. Add zucchini, simmer for 10 more minutes or before the vegetables are soft. Stir within the herbs, season with pepper and salt to taste.

Sprinkle around the bread crumbs and prepare another a few minutes. Take away the bay leaf and serve.

I've never cooked Ratatouille before heck I don't think I've ever eaten it before and tonight's dinner was awesome. I pulled apart single pt WW string cheese and allow it to get melty through it and capped them back with a few low-fat sour cream. Awesome, awesome dinner. And A lot of leftovers! Thanks!!

i simply had to do this recipe. for zero points, it is fairly good. i'd some fresh tulsi and so i sliced up in regards to a tablespoon and added it using the herbs. i added some parmesean cheese in the finish too and offered it over some wholegrain pasta. it's pretty filling and constitutes a ton. i'll certainly get this to again. Yummy! Sadly this isn't zero points though. I simply joined it in to the Recipe Builder around the Dieters site so for future preparers of the recipe Observe that what exactly PLUS value is 4 points per serving. But awesome recipe! and 4 points continues to be an incredible dinner!!

HOLY MOLY. It was AWESOME. I added about 1/2 c of chcken stock along with a big pinch of red pepper flakes. Otherwise, out of the box&... absolutely fabulous. I received my first CSA (community supported agriculture) box yesterday also it had eggplant, onions and tomato plants inside it. You are able to really taste the main difference using fresh, local ingredients. tasty and THANKS GINA.
