Small Whitebait Fritters

Using the entertaining season coming it is always good to possess a couple of easy recipes that you could create if visitors arrive suddenly. Whitebait you can preserve within the freezer and can defrost rapidly in small packets, under running cold water in under 10 mins. If you cannot find whitebait do this recipe with mussels, salmon, smoked fish or sweetcorn.
Makes 20 Fritters

Wine Recommendation - bubbles of any type, or sauvignon blanc

Ingredients
2 eggs
4 teaspoon flour
1/4 teaspoon freshly ground white-colored pepper
1/2 teaspoon Marlborough flaky ocean salt
2 teaspoon chopped fresh herbs - parsley, tulsi, chives, chervil etc
2 teaspoon fresh lemon juice
1 teaspoon lemon zest, finely grated
200g fresh whitebait
4 teaspoon butter

Method
Whisk the eggs inside a bowl, add some flour, pepper, salt, herbs, fresh lemon juice and zest. Lastly add some whitebait and lightly mix having a fork.
Inside a warm fry pan, melt the butter then turn heat as much as high. Spoon within the fritter mix, making small pancakes. Turn heat lower to medium and prepare till fritters are gently golden, switch over and prepare till golden on the other hand.
Serve immediately with lime or lemon wedges, tartare sauce or aioli.
