Dahi Vada is certainly not but North Indian form of curd vada also known as as Dahi Bhalla.Dahi Vada Recipe is a well-liked North Indian snack created using urad dal fritters drenched in sweetened curd combined with the chaat chutneys. Thick Curd (Yogurt) - 1 cup
Sweet Chutney - 1/4 cup
Eco-friendly Chutney - 1/4 cup
Red Chilli Powder - only for sprinkling
Chat Masala Powder - only for sprinkling
Sev-1/4 cup
Cashews, Raisins - 1/2 tablespoons of each
Sugar - 1 tablespoons of
Coriander leaves - 1 tablespoons of chopped
Salt - to taste

For that vada:

Whole Urad Dal - 1/2 cup(deskinned)
Eco-friendly chilli - 1
Ginger root - 1/4 inch piece
Salt - to taste
Water - as needed

Oil - to deep fry

Method:

  1. Rinse whole urad dal well.Soak urad dal for several-4 hrs. Drain water and aside (It's my job to drain water completely after which sprinkle slowly and gradually while grinding, doing this you can be certain of the amount of water).Now grind it to some fluffy texture together with ginger root and eco-friendly chillies inside a grinder sprinkling water occasionally. Dont add much water because the batter will end up runny.The batter ought to be thick and fluffy as proven,add needed salt and blend well.Now add raisins and chopped cashews towards the batter.

My Notes:

  • Never use sour curd,this is the answer to make perfect curd vada.
  • Also grinding the batter in grinder provides a more fluffy vada but when you're in a hurry then mixer is alright too but you will see improvement in the vada texture.
  • Soaking urad dal for additional time say 4-5hrs helps make the vadas absorb less oil.
  • You may also dip the vadas in milk rather of warm water.
  • The above mentioned pointed out recipe yields 3-4 plates of four vadas / plate.
  • Adding chat masala powder provides a nice tangy taste towards the chaat.
  • Use chilled curd.
  • I made use of commercially made set curd, it had been very thick and so i added little water to really make it runny.
