Initially Burmese since it's name suggests, this dish found Eastern India using the many Indians who fled Burma during The Second World War. It's a scrumptious concoction of noodles, spicy chicken and various toppings. The ultimate touch is really a squeeze of lemon which adds the signature tanginess. Burmese Khow Suey - Indian Style is really a fun dish to create whenever you're getting buddies over.

Ingredients
  • 1 cup chana daal (split yellow lentils)
  • 5 cups tepid to warm water
  • 6-7 tbsps of vegetable/canola/sunflower oil
  • 2 medium-sized onions chopped fine
  • 1 tbsps ginger root paste
  • 2 tbsps garlic clove paste
  • 2 tsps coriander powder
  • 1 teaspoon cumin powder
  • 1 tablespoons of garam masala
  • 1 1/2 tablespoons of red chilli powder
  • 1 kg boneless chicken reduce 1" thick pieces (for stir-fry)
  • 1 can coconut milk
  • Salt to taste
  • 500 gms (uncooked) thin egg noodles (serves 4)
  • 1 cup spring onions chopped fine
  • 1 cup leeks chopped fine
  • 1/4 cup fresh garlic clove chopped very fine
  • 1 cup steamed eggs choped into small pieces
  • 5 tbsps dry prawn powder (make by coarsely grinding dry prawns )
  • 2 cups fried spicy potato sticks (substitute with crumble
  • 1 cup coriander chopped fine
  • Juice of just one lemon

Preparation
  • Boil the lentils inside a pan using the tepid to warm water, till soft. Whisk/blend to totally mash the lentils.
  • Heat 2 tbsps from the oil inside a deep heavy-bottomed pan and add some chopped onion. Fry till soft.
  • Add some ginger root and garlic clove pastes and fry for just two minutes.
  • Add some chicken, coriander, cumin and red chilli (1 teaspoon) powders and garam masala and fry for an additional a few minutes.
  • Add some lentil paste, coconut milk, salt to taste and prepare the mix up until the chicken is tender.
