Excellent recipe! Managed to get as mentioned with the exception that 1/2 way with the potato cooking added a few handfuls of frozen peas. Whenever I'd vegetable samosa they'd aloo gobi because the mix also it always had peas inside it and that i found the sweetness from the peas balance the slight spice of all of those other mixture.
