  • Maida (white-colored flour) - 400 gms. (3 cup)
  • Curd - 3 table spoon.
  • Sodium bicarbonate - 1/3 desert spoon.
  • Baking powder - 1/2 desert spoon.
  • Sugar - 1 desert spoon.
  • Oil - 1 table spoon.
  • Salt - 3/4 desert spoon (or based on the taste)
  • Carom seeds or cumin seeds - 1 desert spoon.


Ingredients to organize the filling.

  • Potato - 300 gms. ( 4 steamed)
  • Salt - 1/2 desert spoon (or based on the taste)
  • Eco-friendly chilli - 1-2 (chopped)
  • Ginger root - 1 " lengthy piece (grated)
  • Amchoor powder - 1/2 desert spoon.
  • Coriander powder - 1 desert spoon.
  • Red chilli powder - 1-2 pinch.
  • Garam masala - 1/4 desert spoon
  • Coriander leaves - 1 table spoon (chopped)

Method - Steps to make Amritsari Stuffed Kulcha

Knead the flour to create Kulcha.

Sieve the maida inside a bowl and blend curd, sodium bicarbonate, baking powder, salt, sugar, oil inside it. Mix the components well with hands. Knead the flour with luke tepid to warm water to create a smooth dough. Switch and punch the dough for five minutes to really make it smooth. Apply oil towards the dough and it inside a deep pan. Cover the bowl with clean towel and it in a warm place. Within 3-4 hrs the dough will rise. Punch the dough once more to repair it. The dough to create kulcha is prepared.

Prepare the Filling to stuff the Kulcha.

Peel and mash the steamed taters. Put salt, eco-friendly chilli, ginger root, coriander powder, amchoor powder, red chilli powder, garam masala and coriander leaves. Mix all of the spices well using the mashed taters. The filling to stuff the kulcha is prepared.

Now Prepare Kulcha

Make 8-10 round balls from the dough. Make equal quantity of small balls from the potato mixture also.

Take one ball from the dough and roll it right into a flat disc of three inch. Place the potato mixture ball around the disc and press it with hands therefore it settles lower around the dough. Fold and shut the disc all the edges to create a kulcha.

Dust the kulcha with dry maida and press it with light hands to improve its size up to 3 inch. Now roll the kulcha right into a flat disc of 6-7 inch using the roller. Fix some carom seeds or cumin seeds within the towards the top of the kulcha.
