Fire-in the blow torch and employ sweeping motions to melt and crystallize the sugar mixture until crispy and golden. The whole process takes only a couple of minutes, so take care not to burn the sugar! If you prefer a thicker crust, increase the sugar and repeat using the blow torch. A lazy Susan is helpful to assist evenly brown the sugar.

Without having a blow torch, place sugared pork underneath the broiler inside a 500-degree oven for any couple of minutes. Watch carefully because the sugar starts to caramelize. It takes place rapidly and simply burns.

When you are finished, wrap the pork tightly in heavy-duty aluminum foil and refrigerate.

Serve at 70 degrees or heat inside a 325-degree oven until just warm.
