Maybe you have made pickled eggs? I'd never even heard about them until a readers requested for any recipe, so when I pointed out these to my father, he explained these were bar food. (&"For how long do you want to bars, father?&" &"Before I met your mom.&" &"So half a century ago you can get them in bars, in Minnesota.&" &"Yes.&")

Bar culture aside, a couple of my personal favorite foods are pickles and difficult steamed eggs, so why wouldn't you pickle the eggs? Apparently a well known method to pickle them is within beet juice, so the egg-whites turn a fairly fuchsia pink.

A couple of days once i made my first batch I had been offered beet pickled eggs inside a salad in a bar/restaurant in Gettysburg. These were pickled completely with the yolk, turning the yolk slightly pink too.

The more you retain the eggs within the pickling liquid, the much deeper it penetrates in to the eggs. I’m guessing to pickle them completely through you need to have them within the liquid a minimum of a few days.

Below is caused by several days of experimentation (and many a large number of eggs!) with various pickling mixtures. There exists a beet pickled egg with cardamom and star anise, in addition to a curried pickled egg with Indian spices, a jalapeo pickled egg with cumin and oregano, along with a tarragon pickled egg with mustard seeds. Choose!

My personal favorite may be the beet pickled eggs, simply because they’re so pretty and that i love beets. The spice combinations are prime candidates for experimentation, alter them and can include your preferred seasoning for egg salad.

Used to do discover that the pickling liquid will need vinegar diluted with water. Straight vinegar is simply too acidic. I love adding sugar since it helps balance the acidity from the vinegar and that i just like a slightly sweet pickle.

They are refrigerator pickles. I don’t fully realize how lengthy they’ll last within the refrigerator, however i’m guessing a minimum of several days. Or no individuals are old hands at making pickled eggs, don't hesitate to share your expertise (or favorite recipe) within the comments.

Pickled Eggs Recipe

  • Prep time: twenty minutes
  • Prepare time: ten minutes
  • Yield: Makes 6 pickled eggs

Ingredients

Beet pickled eggs with cardamom and anise

  • 1 beet, peeled and roughly chopped into one to two-inch sized pieces, cooked*
  • 1 cup beet juice*
  • 1 cup cider vinegar
  • 1/4 onion, sliced
  • 1/3 cup granulated sugar
  • 3 cardamom pods
  • 1 star anise
  • 6 hard cooked eggs**, peeled

*Simmer the chopped beets in a mug of water, covered, until tender, 30-40 minutes, or used canned beets. Make use of the beet juice in the cooking water, or even the juice from canned beets.

Curried pickled eggs

  • 1 cup cider vinegar
  • 3/4 cup water
  • 1/4 onion, sliced
  • 3/4 cup white-colored granulated sugar
  • 3 cardamom pods
  • 1 teaspoon mustard seeds (yellow or brown)
  • 1 Tablespoons of yellow curry powder
  • 6 hard cooked eggs**, peeled

Jalapeno pickled eggs

  • 3/4 cup cider vinegar
  • 3/4 cup water
  • 1/2 cup plus 1 Tablespoons of white-colored granulated sugar
  • 6 cloves
  • 2 jalapeno peppers, sliced in two lengthwise, seeds removed and discarded
  • 1 teaspoon cumin seeds
  • 1 bay leaf
  • 1/2 teaspoon dry oregano
  • 1/4 onion, sliced
  • 1 garlic clove clove, peeled
  • 6 hard cooked eggs**, peeled

Tarragon pickled eggs

  • 3/4 cup cider vinegar
  • 3/4 cup water
  • 1/4 onion, sliced
  • 2 sprigs fresh tarragon
  • 1 teaspoon mustard seeds
  • 1/2 cup plus 1 Tablespoons of white-colored granulated sugar
  • 1 teaspoon herbs de provence
  • 6 hard cooked eggs**, peeled

**Boil or steam the eggs until hard cooked. To steam the eggs, devote a steamer rack over boiling water, cover and steam for 25 minutes. Remove from heat and rinse with cold water. To boil the eggs, cover with 2 " of cold water inside a saucepan, provide a boil, cover, remove from heat, and let take 12 minutes, then rinse with cold water. Hard boiling is most effective with eggs a minimum of per week old, otherwise they might be hard to peel. Steaming is effective with fresh eggs.

Method

1 Peel the eggs and put towards the bottom of the clean glass jar, quart sized.

2 Inside a medium saucepan, add some vinegar, water (or beet juice if using), the onion (and jalapeno if using), sugar, and spices. Provide a boil and prepare, uncovered, before the sugar has dissolved and also the onions are translucent, about a few minutes. Remove from heat and let awesome a couple of minutes.

3 Pour the vinegar onion mixture within the eggs within the jar, since the eggs completely. If you're making the beet pickled eggs, place some or all the cooked beets along with the eggs within the jar (this helps to create color towards the eggs, and you'll have pickled beets too.) Secure close the jar's cover. Refrigerate up to and including month.

The pickled eggs you will need to eat following a couple of days. The more the eggs sit within the pickling juice, the greater the pickling juice will penetrate the eggs.

Red beet eggs Try cracking egg shells w/o peeling off, place in jar of beet juice. Gives eggs a marbled look.

Does anybody know if you're able to still make red beet eggs with eggs that didn’t peel well and also the yolk is uncovered? My eggs were too fresh :(

May be the sugar needed? Could I actually do with no sugar or change it with a few quantity of honey? I would like hot spice greater than sweet.

Well&.... I don’t have a great deal to increase what others have stated however i always get kosher dill pickles although that number of pickle already has garlic clove within the brine, I increase the chopped garlic clove towards the jar after opening it. I purchase the jars of chopped garlic clove inside my local &"Dollar Tree&" store because it appears to become plenty strong and in the end&.... it’s only a buck. When the jar is empty I fill the jar track of peeled hard steamed eggs and add another heaping spoon from the chopped garlic clove, switch the lid and provide it a great shake and into the ‘fridge it is going. Over a couple of days I’ve got a bit of tasty garlic clove-dill eggs. Well that’s it. Like I stated little to include.

In Lebanon, we pickle Turnips similarly. A couple of beets will also be included in this, mainly for that color.
