Makes eight to ten servings

Ingredients

  • 3½ Pounds Fresh Jumbo Yams, reduce 1 " to at least one½ inch cubes
  • 1 Stick of Butter, melted
  • 1 Cup Granulated Sugar
  • ¾ Cup Light brown Sugar, gently packed
  • two tablespoons Honey
  • ½ Teaspoon Orange Zest
  • 1 Teaspoon Vanilla Flavoring
  • ¾ Teaspoon Ground Cinnamon
  • 1/8 Teaspoon Ground Nutmeg
  • 1 Heaping Tablespoon All-purpose Flour
  • ¼ Cup Roasted Pecans, chopped (optional)

Directions

Preheat oven 375 levels

Put the cut yams right into a 9x13 baking dish. Pour within the butter, sugar, brown sugar, honey, orange zest, vanilla flavoring, cinnamon and nutmeg. Lightly stir the taters then cover with aluminum foil and bake for forty to fifty minutes. (Note: The yams ought to be slightly fork tender.)

Take away the foil, spoon out ¼ cup from the syrup in the yams and pour right into a normal size bowl. Add some flour towards the syrup and stir intensely until smooth. Pour the flour mixture within the yams and lightly stir.

Still bake the yams uncovered for an additional 20 to 25 minutes or until syrup is thickened. Once done, top with pecans (optional) and serve.
