How jen does it lentil tacos recipe

These lentil tacos are full of flavor, vegan and affordable to create! They've become our favorite meatless meals.

Jen’s Lentil Tacos

3 1/2 cups water
2 cups lentils
1 small onion, finely chopped
1/2 jalapeno, finely chopped
3 cloves garlic clove, minced
1 Tablespoon essential olive oil
Juice of just oneOr2 to at least one whole lime
1/4 cilantro
2 teaspoons each: cumin, coriander, chili powder, salt

1 teaspoon salt
12 corn taco shells

Additional limes, lettuce, and fresh salsa for topping

Add water and lentils to some pot and produce to some boil. Reduce heat to medium, add lid and simmer for ten minutes.
Meanwhile, heat a skillet over medium high temperature. Add one tablespoon essential olive oil and saute onions, garlic clove and jalapeno peppers for around 3 minutes or until tender.

When the lentils have simmered for ten minutes, smash them just a little. Stir in onions, garlic clove, jalapeno peppers, cilantro, lime juice, spices and salt. Taste and adjust seasonings, if preferred.

Spoon lentil filling into taco shells and top with lettuce and fresh salsa. Serve with lime wedges.
