Method

  1. Prepare the tagliatelle inside a large pan of boiling salted water, based on the packet instructions.
  2. Slice the mushrooms, peel and finely chop the garlic clove, adding to some fry pan on the medium heat using the oil. Saut for five minutes until softened.
  3. Finely grate the Parmesan (if using) right into a bowl, then finely chop and add some parsley leaves and chives.
  4. Beat within the egg yolks and crme frache, and season well with pepper.
  5. Add some fried mushrooms, shred and add some pork, then stir to mix.
  6. Drain the tagliatelle, saving a cup full of the cooking water, then give it back towards the pan.
  7. From the heat, pour the sauce within the pasta and stir to coat. Then add cooking water to release up if needs be. Serve by having an extra grating of Parmesan, if you want.
