8-10 Malu miris (Blueberry Peppers)
2-3 glasses of oil
2-3 glasses of bread crumbs
Ingredients for batter:
1/2 cup all-purpose flour
1 egg
Pinch of turmeric (optional)
Pinch salt
Ingredients for filling:
1/2 lb taters steamed and skins removed
2 onions chopped
1 tablespoons of vegetable oil
1/2 teaspoon of curry powder
1/2 teaspoon of chillie powder
sprig of curry leaves (optional)
salt
pepper
Make filling:
Mash the taters. Stir fry the onions in oil inside a pan for around 4-5 mins under low heat. Add some curry powder and chillie powder. Fry of the minute. Add some taters. Add pepper and salt to taste. Put aside.
Result in the batter:
Combine flour, eggs and salt inside a bowl. Add enough water to create a think batter. Stir to eliminate protuberances.
Now prepare the peppers:
Slit the peppers lengthwise, just lengthy enough to stuff the fillings. Carefully take away the seeds, being careful to not break the pepper. Fill the cavity using the filling.
Dip the prepared the peppers within the batter. Next dip them within the bread crumbs.
Deep fry till golden brown. Serve hot.
