Gujarati khichdi recipe vaghareli rotli


Over the past few years, I learnt many Gujarati recipes. Masala Khichdi is a included in this too. Because of my buddies here. It's my job to get this to on the lazy weekend. It's healthy, filling and that i wont feel guilty because of not cooking an entire meal. This can be a complete win-win deal :)

Preparation Time: 15 mins
Cooking: 30-40 mins
Serves: 3-4


Ingredients:
Basmati grain: 1.5 cups, refer notes
Split gram dal hesaru kalu hara moong: 1/4 cup, with skin
Moong dal hesaru bele skinned gram dal: 1/4 cup
Salt: When needed

Vegetables: 2.5 cups, diced (I made use of French beans, carrots, taters, and eggplants)
Onion: 1 medium-sized, chopped fine
Green spinach: 1/4 cup, finely chopped
Eco-friendly peas: 1/4 cup, I made use of frozen

Oil: 2 teaspoon
Ghee: 1 tablespoons of
Mustard seeds: 1 teaspoon
Cumin seeds: 1 teaspoon
Cinnamon: 1 " stick
Clove: 4-6 nos
Curry leaves: 4-6 torn
Eco-friendly chili paste: 1 teaspoon, pretty much
Ginger root paste: 1 teaspoon
Garlic clove paste: 1 teaspoon

Garam masala: 1/2 to at least one teaspoon
Turmeric powder: 1/4 teaspoon
Water: When needed


Method :
Wash both lentils completely and allow them to soak for half an hour.
Wash the basmati grain individually and it aside.
Inside a big sauce pan, add ghee and oil. When hot, toss in the mustard seeds, cinnamon and clove. When mustard seeds splatter, add some cumin seeds. When cumin seeds turn golden brown, toss in the curry leaves, the onion and saute before the onions become translucent.
Add some diced vegetables, chopped green spinach and blend. Prepare the vegetables on the medium heat uncovered for several-4 mins.
Place the turmeric, eco-friendly chili paste, ginger root and garlic clove paste towards the vegetables and blend.
Add water and permit water to boil.
Once water starts boiling, toss in the drenched lentils, salt and garam masala. Provide a stir.
Maintaining your pan half covered, prepare the lentils for ten mins in medium heat. When the lentils are half cooked, add some eco-friendly peas and grain.
Prepare it before the grain is soft and fluffy. (It won't take greater than 10-15 mins).
Once grain is cooked, cover the sauce pan and allow it to take another ten mins.
Fluff in the khichdi and serve it with raita or kadhi or any side dish of your liking.

  • I generally add water within the below pointed out proportions. 1 (grain + lentils) = 2 to two.5 water
  • This recipe could be customized based on that which you have or what you would like. You are able to replace moong dal with toor dal, basmati grain with every other grain (like sona masoori, ponni or lengthy grain grain). Toss in whatever vegetables you've.
