Ingredients

Coriander seeds - 3/4 cup
Red chilli (lengthy variety) - 20
Toor dal - 1/4 cup
Channa dal - 1/4 cup
Pepper - 3 tblsp
Cummin seeds - 3 tblsp
Hing - 1/2 teaspoon

  1. Dry roast red chilli,hing (if solid. Refer notes), channa dal and toor dal first until dals are golden in colour. Roast in medium flame with constant frying. Transfer to some plate to cool down the after which roast coriander seeds and pepper until aromatic.
  2. When the coriander seeds is roasted well, it lends an excellent flavour. Now add jeera lastly. Fry until it starts popping. Awesome everything completely.
  3. Powder it to some fine powder inside a mixer and store within an airtight container.

Notes

    • I made use of solid hing so roasted across the ingredients together. If powder, you can include it towards finish while roasting to avoid burning.
    • Could be stored for any month if handled correctly within an airtight container.
    • If you would like you can include turmeric within this powder. I add turmeric to rasam only when needed.
